It looks like specifying a network RAID drive will be a very useful way for us to implement a backup mail server, but it appears it is only possible to specify the path for the account directories. Does that mean that we would still need to find a way to periodically back up the AMS configuration files, white/black lists, content filter rules, Bayesian database, etc?

You can simply more your entire "C:\Program Files\Code-Crafters\Ability Mail Server 2" folder to another raid drive to move the entire installation and automatically have this guarded by your raid mirror system. All you need to do then is update your desktop and start menu shortcuts. There are no registry entries to allow easy migration to another drive or server.
