Restore deleted folders

Someone accidentally deleted a set of folders from their account. I can get the folders and files off the backup, but what's the best way to restore the deleted folders and e-mails? Config.ini no longer has the folders in the list.

The best and simplest way to achieve this is to drop the folders back into the account, and then simply recreate them using WebMail or IMAP4. The mails will automatically re-appear within WebMail (you will need to log out all sessions and users of the account, or simply reload the mail server) but from within an email client, sometimes the mails will be ignored and so you may have to delete and recreate the account within the users mail client (to refresh the mail clients caches).
